![]() Got a crystal ball? This has been a crazy ride. Two licenses hang on the wall (the one to brew and the one to sell and have a retail store), and a third is on its way (the one to allow us to sell a 12 oz glass to enhance tourist or educational experiences). The retail space is done. Everything has been ordered or is here. So why aren't we brewing? We figured bureaucracy would be our biggest delay. It was, to the tune of about six months in total (hooray!), but it's contractor time that's now keeping us grounded. A little more plumbing, a little more electrical, a little more steam, and then we get to call in the four different inspectors and hope for the best. So when does that mean? We don't know - all we can say is "soon." Cornwall hasn't had a working brewery for ninety-five years. With that perspective, a few more weeks, while psychologically huge, doesn't seem like much in the grand scheme of things. We're hoping for Summer in September ;) Cheers!

Okay, so it's been a ... bit. Financing, sourcing, networking, ordering and renovating have all taken up much of our time. The picture below shows where we're at (more or less) now, and there's still much to do - finish with permits, licensing, packaging, and create that elusive retail store where we can finally sell the good stuff ... to good people like you. As of mid-April, our time will finally be fully devoted to the brewery (take that, day job!)
The most common comment we hear is "we can't wait for you to open!" Neither can we. Big push, let's go :) ![]() And are singing. So we're making a small-batch brewery in Cornwall, Ontario, settled in the United Counties of Stormont, Dundas, and Glengarry. It's not a question of if - it's a question of when. In the spirit of craft brewing, we're doing this with ingenuity, rather than a lot of financial might, fighting the good fight (so to speak) to create a business that is a little love, and mostly toil. We've been spoiled along the way, with support, generous offers, encouragement - along with the fun of making great beer. And now that financing is singing along (more or less), we seem to be on our way. Stay tuned. |
